Saucy Spicecraft Style Meatloaf

A mix of beef and pork mince, plenty of Crackin Kiwi Seasoning and a few pantry staples is all you need to make this hearty, tender meatloaf. Super easy to throw together and leave to cook.

500 g beef mince
300 g pork mince
2 eggs
½ onion, diced
2 Tbsp milk
1 cup breadcrumbs
2 Tbsp Crackin’ Kiwi Seasoning
2 Tbsp No Bagel, No Bagel Seasoning, divided
2 Tbsp tomato sauce
1 Tbsp soy sauce

For the Glaze:

½ cup tomato sauce
2 Tbsp chicken stock (or water)
1 tsp soy sauce

Instructions

Preheat oven to 200C.
In a large bowl, add the breadcrumbs, milk and onion. Mix well and sit leave to soak 5 minutes.

Add in Crackin Kiwi, 1 tablespoon of the No Bagel, tomato sauce, soy sauce, a pinch of salt and mix well with your hands. Make sure everything comes together but don't overmix.
Place into a greased loaf pan and press to the edges, so that the surface is flat. Poke your fingers down the edges to press down. Sprinkle with remaining No Bagel.
Cook 25 minutes.

While cooking, mix all the glaze ingredients in a small bowl.
Then remove from oven and add the glaze all over the top. Place back in the oven a further 20-25 minutes.
Cool 10 minutes before cutting into thick slices.
