Mexican Mince, Beans and Rice
Ingredients:
- 1 Tbsp cooking oil
- 1 onion, roughly diced
- 2 cloves of garlic, thinly sliced
- 2 stalks of celery, diced, same size as diced onion
- 2 carrots, diced, same size as diced onion
- 500gm beef mince
- 2 Tbsp Spicecraft Maize'in' Mexican Rub
- 1 tin black beans
- 1 tin diced tomatoes
- 1 tsp sugar
- 1 Tbsp red wine vinegar
- Spicecraft Original salt rocks, to taste
- Rice, cooked
- Coriander, Guacamole, and sour cream to garnish
Method:
- Before starting put some rice on to cook, enough for 4 people ( I like to use brown rice, but use what you like).
- In a pan over a medium heat, add 1 Tbsp Oil, add the onion and cook until soft and translucent, add the garlic and cook for a further minute.
- Now add the celery, carrots and mince and 1 Tbsp of Maize'in' Mexican Rub, cook for around 5 minutes occasionally stirring until mince is browned.
- Add the black beans, tomatoes, sugar, vinegar and another 1 Tbsp of Mexican Rub. Cook for 10-15 minutes until everything is heated through and has reduced down slightly.
- Add Original Salt Rocks to taste, and if you like it hotter, add more Mexican Rub.
- Place some rice in serving bowls topped with the mince mixture, then guacamole, sour cream & coriander.
- Optional: add some tomato salsa on top too.
