  • 2 large chicken breasts
  • 2 teaspooons Spicecraft Smokey Garlic Salt
  • 2 teaspoons Spicecraft Pimped Pepper
  • 2 teaspoons olive oil
  • ½ cup thinly sliced sundried tomatoes (optional)
  • 150 ml chicken stock
  • 150 ml cream
  • 100 g parmesan
  • 5 stalks of broccolini, 1 large broccoli head, 1 cup green beans or equivalent other green vege
  • Fresh basil leaves
  • Half lemon

Instructions

  1. Slice each of the chicken breasts horizontally to form 4 roughly equally sized steaks. Season each well with the smokey garlic salt and pimped pepper.
  2. Heat the olive oil in a large pan over a medium-high heat. Sear each side of the chicken breasts for a few minutes until brown (they dont need to be cooked through yet). Remove the chicken from the pan.
  1. Lower the heat and in the same pan, add the sundried tomatoes, stock, cream and parmesan. Bring to a simmer and cook 3-4 minutes until just beginning to thicken.
  2. Return the chicken back to the pan and add chosen vegetables and cover with a lid.
  3. Cook 5 minutes, then test chicken doneness. Remove lid and simmer until thickened a little more.
  4. Serve the chicken on your chosen starch with the vegetables and plenty of sauce drizzled over the top and a squeeze of lemon.
