Smokey Garlic Marry-Me Chicken

Ingredients
- 2 large chicken breasts
- 2 teaspooons Spicecraft Smokey Garlic Salt
- 2 teaspoons Spicecraft Pimped Pepper
- 2 teaspoons olive oil
- ½ cup thinly sliced sundried tomatoes (optional)
- 150 ml chicken stock
- 150 ml cream
- 100 g parmesan
- 5 stalks of broccolini, 1 large broccoli head, 1 cup green beans or equivalent other green vege
- Fresh basil leaves
- Half lemon
Instructions
- Slice each of the chicken breasts horizontally to form 4 roughly equally sized steaks. Season each well with the smokey garlic salt and pimped pepper.
- Heat the olive oil in a large pan over a medium-high heat. Sear each side of the chicken breasts for a few minutes until brown (they dont need to be cooked through yet). Remove the chicken from the pan.
- Lower the heat and in the same pan, add the sundried tomatoes, stock, cream and parmesan. Bring to a simmer and cook 3-4 minutes until just beginning to thicken.
- Return the chicken back to the pan and add chosen vegetables and cover with a lid.
- Cook 5 minutes, then test chicken doneness. Remove lid and simmer until thickened a little more.
- Serve the chicken on your chosen starch with the vegetables and plenty of sauce drizzled over the top and a squeeze of lemon.
