Crackin' Kiwi Chicken
For the sauce:
4 tbsp Soy sauce
2 tbsp brown sugar
2 tbsp Sriracha
2 Limes, juiced
4 Cloves of garlic, chopped
2 Tbsp Fresh Ginger, minced
500g Chicken thigh fillets
2 Tbsp Cornflour
3 Tbsp Crackin' Kiwi Rub
No Bagel, No Bagel seasoning
2 tbsp Fresh Spring onions, sliced
Mix all the sauce ingredients together and set aside.
Pat dry the chicken thighs with a paper towel, then coat thighs in cornflour and Crackin' Kiwi Rub.
Heat 2 Tbsp of Olive oil in a pan on a medium-high heat, add chicken and cook for 3 mins until well browned, turn chicken and cook other side for another 3 mins. Lower the heat, add the sauce, cover pan and continue cooking until chicken is cooked through.
Sprinkle with spring onions, No Bagel seasoning and serve with rice and some greens. 💚
