Crackin’ Kiwi Chicken and Cheese Quesadillas

Crackin’ Kiwi Chicken and Cheese Quesadillas

Ingredients:

  • 8 tortilla wraps
  • 400g chicken breast, diced
  • 2 tablespoons Greek yoghurt
  • 2 teaspoon Spicecraft Crackin’ Kiwi Rub, plus extra to taste
  • ½ lemon, juiced
  • 250g grated cheese
  • 1/2 cup of coleslaw - no dressing
  • 2 teaspoons olive oil

Method:

  1.  Mix the Greek yoghurt, Crackin’ Kiwi Rub and lemon juice together in a large bowl and add chicken pieces.
  2. Heat one teaspoon of oil; in a pan over a medium-high heat. Once hot, add half the chicken pieces and cook until browned (about 3-4 minutes), stirring occasionally to turn. Remove from pan and repeat with remaining chicken.
  3. Take four of the wraps and divide the chicken equally between them, top with cheese and slaw and other tortilla.  For adults, add a bit more Crackin’ Kiwi rub on top if desired.
  4. Wipe the pan clean and heat to a medium-high heat. Add a quesadilla and cook 2 minutes until cheese begins to melt. Flip and repeat until both sides are browned. Repeat with remaining quesadillas.
  5. Serve with Smokey dip or sauce of choice and some coleslaw.
  6. To make the smokey dip: Mix ½ cup mayo or Greek yoghurt with a squeeze of lemon and plenty of Spicecraft smokey garlic salt. You can also add a sprinkling of Crackin' Kiwi Rub to spice it up if you like.
