Healthy Lettuce Cups 🥬🥬🥬
Ingredients:
- 2 finely sliced chicken breasts (cut in half-(butterflied) first to make thinner strips)
- 3-4 Tbsp Crackin' Kiwi Rub
- 2 Tbsp olive oil
- 1 onion finely diced.
- 3-4 cloves of garlic
- 1-2 red capsicum finely diced.
- 1-2 stalks celery finely diced.
- 1 whole iceberg lettuce, remove the middle so you have little lettuce cups.

Sauce mixture:
- Mix below together in a small jug or bowl.
- 1Tbsp sesame oil
- 1 Tbsp finely chopped fresh ginger.
- 2Tbsp rice wine vinegar
- 4Tbsp hoisin sauce
*Soya sauce to taste - or Pimped Pepper
*Siracha - Optional
Directions:
- After slicing the chicken breasts into thin strips, mix the chicken with the Crackin' Kiwi Rub and olive oil until the chicken is well coated.
- Brown the chicken in a pan over medium heat until chicken is nicely browned and cooked through. Add the onion, and garlic, cook for a further 2-3 minutes.
- Pour the sauce mixture over the chicken and stir. through, now add the capsicum and celery, and cook for a further 4-5 minutes. Add some soya sauce to taste, or some Pimped Pepper (Pimped Pepper is always better!). You can also add some siracha if you want.
- Place mixture into lettuce cups, sprinkle with No Bagel, No Bagel, put in your hand, then put in your mouth!
**You can also put some cooked rice or rice noodles into the cups too.
**1 whole lettuce - remove heart by banging whole lettuce on a counter, banging on the base of the lettuce, then pulling the stalk out.
