Ingredients
- 600 g Japanese-style udon noodles (3 x 200g packets)
- 4 rashers of bacon, chopped
- 1 teaspoon oil
- 3 large eggs
- ½ cup cream
- 1 Tablespoon Pimped Pepper
- 1 Tablespoon yellow miso
- ½ cup grated parmesan cheese
- Spring onions, thinly sliced (for garnish)
Instructions
- In a small bowl, whisk together the eggs, cream, Pimped Pepper, miso, and a pinch of salt until well combined.
- Heat a large frypan over medium-high heat, add oil and chopped bacon, and cook for 5-6 minutes until crispy.
- Meanwhile, place the udon noodles in a large bowl, cover with boiling water, and leave to sit for 10 minutes. Drain the noodles.
- Add the drained noodles to the bacon pan and toss to coat them in the bacon fat.
- Reduce heat to low, add the egg mixture, and stir through the parmesan. Cook for 1-2 minutes until the noodles are saucy and well-coated.
- Serve with extra parmesan and a sprinkle of spring onions for garnish.
