Smokey Garlic, Potato and Bacon Chowder

Serves: 4
Time: 50 minutes

Ingredients:

  • 200g bacon
  • 1 small onion
  • 1 teaspoon olive oil
  • 1 cups chicken stock
  • 1 cup cream
  • 1.2 cups milk
  • 2 teaspoons Spicecraft Smokey Garlic Salt
  • 600g potatoes, diced

Method:

  1. In a large saucepan, heat the oil and add onion and bacon. Cook 5-6 minutes until onion is starting to turn translucent.
  2. Add the potatoes and stock to the pot and bring to a simmer. Cook for 25 minutes until potatoes are falling apart.
  3. Remove a few large spoonfuls of the chunky potato bits and set aside, then allow the soup to cool slightly.
  4. Transfer the soup to a blender and blitz a few times. Drizzle in the cream and blend until you reach the desired consistency.
  5. Stir the set-aside potatoes back through the soup and serve with a crack of pepper and a sprinkle of smokey garlic salt.
